Grapes are selected from high quality parcels containing lots of old vines, primarily Grenache and Rolle (Vermentino). Harvest is conducted from sunrise through until noon. Destemming and slight crushing takes place at 7-8 degrees centigrade. The wine is comprised 90% free run and 10% first pressing.
