Of the many white grape varieties grown in France, only a handful has come to make up what is a dazzling spectrum of styles and traditions across the country's better-known appellations. As with red, French white wine is more about the 'where' than it is the 'what'. Which is why, for example, 'Chablis', 'Meursault' and 'Mâcon' all mean chardonnay, and 'Sancerre', 'Pouilly-Fumé' and 'Touraine' sauvignon blanc, each with a distinct expression of its environs.
