Ayala, founded in 1860 at Aÿ, was the favourite champagne of that famous voluptuary and gourmet King Edward VII, by whom it was awarded a Royal Warrant in 1908. Hugely fashionable in the ‘20s, it rather disappeared from view, except to connoisseurs, until bought by the great family-owned Bollinger company in 2005. Since then, it has come back into its own.

I have sought out and drunk Ayala all my life and cannot recommend it too highly. Chardonnay, Pinot Noir and Meunier champagne at its very best.

Sister to Bollinger, the Ayala Brut Majeur is a wonderfully dry and elegant champagne. Delicately aromatic with citrus, blossom and white peach notes alongside honeysuckle. The palate is fresh with apple and peach fruit, notes of hazelnut and a long, persistent finish.
