Our range of declassified wines are all from the greatest Châteaux in Bordeaux. The grapes come from their vineyards and receive the same immaculate care and attention as the Château label itself but mother nature never deals an even hand and they find themselves with too much of one grape variety - merlot, cabenet sauvignon or cabernet franc for the top reds to meet the final blending requirements which need to be much the same every year.
This is where we come in with these surpluses being declassified. For decades these wines were blended to be drunk fairly young and sold to local restaurants in Bordeaux (and Paris). Now we have a share of that market. I would recommend opening these wines an hour before serving or decanting them as still young (but delicious) wines.
