Pouilly-Fumé, Domaine Des Fines Caillottes, Jean Pabiot et Fils 2021
I am addicted to really good Pouilly-Fumé, and Jean Pabiot’s is one of those with a trademark hint of chalk and smoke, and lovely, flinty, mineral underbelly. Its sauvignon flavours are restrained, sophisticated and elegant - much more so than most good sauvignons from New Zealand, which I find a tad overpowering.
This is one of the best Pouilly-Fumés on the market, from a fifth generation family of artisanal growers who have some of the best terroir in this famous Loire appellation - Silex (flint) and Kimmeridgian (clay and limestone containing fossilised sea creatures including oysters).
Perfect with shellfish, sushi and all fish dishes - especially sole, hake, halibut grilled - and, of course, on its own. You are in for a treat and won't be disappointed.
