Bindi Sergardis 'Nicolò Governo' 2021 is a rich, beautifully complex Tuscan red of the highest quality.

The term 'Governo' refers to an old winemaking technique developed in northern Italy by which a portion of the harvested grapes are dried prior to pressing and the resulting must being added to the partially fermented base wine. This drying process - also known as Appassimento - concentrates the flavours and sugars, adding richness, texture and deep complexity to a wine. The same process, used in Italy's famously full-bodied red blend, Amarone.

I first met Nicolò whom the wine is named after about 7 years ago in Tuscany with the rest of his family - a charming, imperious Italian Grandee in his 80s who was still involved with the selection of grapes and wine making of his wine who came with us all to annual Palio races in Siena where the family had an interest in one of the teams involved - racing bareback in their house colours.

'Nicolò' is produced with 100% Sangiovese from their 'I Colli' vineyards in Tuscany where the Bindi Sergardi estate has remained in the family for 23 generations, tracing its roots as far back as the 15th century.

Deep, rich, rewarding. Here, the traditional Tuscan ?Governo? practice of integrating partially dried grapes to the vinification process adds an extra level of intensity and texture for a wellstructured, harmonious and layered palate.

Loved this with pasta and a rich arrabbiata sauce

A deep rich red which will probably age well for some years to come. Nose needs a little time to open before heady brambly aroma excites the nose. Excellent autumn fruit on the mouth followed by good length that lasts. Needs to be put down between sips and goes well with venison steak and saddle of lamb.

"A little like the Amarone's of the Veneto, Governo is an ancient technique of making wines in Tuscany, partly from dried grapes. Made from 100% Sangiovese grown at 300 metres altitude, it spent a few months in used French oak barriques. Interesting, smoky and herbal nose here, a touch of leafiness and quite meaty tones to the black plum fruit. In the mouth there is plenty of juiciness, but a lean, gripping tannin adds a chewy and serious edge. Some cherry inflections to the acidity, and a concentrated finish."

"Lots of crushed blackberries and black cherries on the nose and palate, together with plenty of walnuts and more bitter walnut shells. Medium-to full-bodied with well-integrated tannins and a dense, fruit and nut finish that pushes on and on. Loads of character here. Something quite special. Enjoy now, or let it develop for a while in the bottle."
